Bearing in mind there were two in the first film, when the '59 Chevy gets destroyed and when Bubba is shot off his bike by Max, I wonder if it was intended to be a symbol of death / destruction? This scene would be shortly before the compound is blown up. Trained birds weren't the easiest thing to arange on a film set so it must have been deliberate.
