Cooking on gas! I'm still fascinated by these N/S/DK van-cars. Were they supplied like this by the factory or locally converted (importers or aftermarket)? Were they taxed at a cheaper rate as vans than cars (as happened in UK)? Is there a list of them all anywhere? (eg I found a Cortina van at /vehicle.php?id=12438 ).

AFAIK VW- and Opel- Vans were made in the factory, not by external coachbuilders. You sometimes can find old sales brochures (not only in Danish or Norwegian, also in German or English) at classic car-markets.

Yes, it had something to do with lower taxes for trucks. In West Germany there was a similar role, too (no back seats, no possibility to mount back seats, no side windows -overpainted windows weren't allowed, estate-body), but such vehicles were very rare here anyways.

Until 2004/2005 you could change with this trick a common Estate-car to a truck with lower tax, by doing this conversion by yourself. But then this rule was stopped. Where I lived before, there was a Ford Granada II, a VW Passat 32B and a Nissan Patrol running, converted like this.
When you had been tricky, you could keep this regulation, when you had a former Bundespost-car, like a Golf I or a Polo 6N.

I think, similar rules had been in the Netherlands and Austria. I had specific sales brochures for such light trucks for NL an A in my hands a time ago.
In NL these cars have a higher, glassfibre-made roof, I remember. You can see them there still today.
