I think it is a 71 Boss 351 Mustang(same car as the shift shots). It looks like it says Boss on the Valve Covers.

I'd love to know whatever happened to it? I hope Burt saved it? They filmed the barge jump last from what I understand the scene the the movie was the second attempt. The first try the car hit the barge and fliped off into the river. Burt dove in and saved the stunt man. and the second attempt was with the other car. Im guessing they totaled both. but i never heard what happened to the other car that took a bath maybe still down there?
