Seems Aus Mk1 assembly was 1970-75. I don't know Aus trims and their differences from UK, but I'd guess Aus got more shiny bits than UK equivalents. For instance main has Super wheel trim rings and chrome filler, but ordinary rubber round windows. Therefore my guess would be shinier-for-Aus Deluxe. Ep.339 might have shiny trim round rear panel moulding or it could be trick of the light; if it is trim, the profile is different from 1971+ UK. Can't say anything useful for Ep.373, while Ep.375 seems to have shiny window trim, and 71+ backwashed grille with rectangular lights which in UK would be GT or XL (renaming of Super).

As a point of info, did any Aus Escorts have the round headlights of UK Basic/Deluxe/L and sporty ones (Sport, Mexico and RS 1600)??

Twin Cam had rectangular in UK, and there was some Aus T-C assembly, later renamed Escort GT 1600 and continuing on after UK T-C finished in April 71; all Aus production(approx 1200) also seems to have had rectangular lights. "Ford began marketing the Twin Cam in Australia from March 1970 as an alternative to Holden’s Torana GTR, with assembly at Homebush, NSW using local Escort bodies with imported Lotus running gear. Australian Twin Cams also received better interiors (with additional wood trim), an optional GS pack and a wider range of exciting period colours, although Ford briefly rebadged it as the GT 1600 in November 1971." - Link to "www.shannons.com.au" - interesting pictures as it shows normal T-C quarter bumpers, 1971+ black rear panel which never happened on UK T-Cs as production had ended, chrome window trim (again never fitted on UK T-Cs), and unique-to-Aus black paint around side windows.

I've basically grouped them all together as there's not enough detail to really differentiate between them.

So far as round headlights, I'm fairly sure that Ford Australia standardised on rectangular headlights (a Confederation of Australian Motorsport spec. sheet claims it). But, round headlights have been a popular modification for a long time, making it hard to be definitve...

Detailed Aus production info now found here. Seems Aus never called a trim Deluxe, but it was Standard (1970) then L (1971+). Main has wheel trim rings and chrome filler, so renaming to Super(1970)/XL(1971+.
